Ingredients
For the Stroganoff:
600g chicken breast or thigh, sliced into strips
1 tsp garlic powder
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, minced
250g mushrooms, sliced
1 tsp paprika
1 tbsp Dijon mustard
1 tsp flour
1 cup chicken stock
1 cup cooking cream or sour cream
1 tbsp Worcestershire sauce
Salt & black pepper to taste
Fresh parsley, chopped (for garnish)
To Serve:
Cooked pasta (like fettuccine or penne)
Or mashed potatoes
Or steamed Rice
Step-by-Step Instructions
Heat oil in a large frying pan over medium-high heat. Add chicken strips, season lightly with garlic powder, salt and pepper, and cook until lightly golden. Remove and set aside.
In the same pan, add butter, garlic and mushrooms, stir until mushrooms are tender and golden. Sprinkle in paprika and stir to coat.
Add flour and stir for 30 seconds. Mix in Dijon mustard, Worcestershire sauce, and chicken stock.
Return chicken to the pan. Simmer 15 minutes, then reduce heat and stir through cream. Cook gently until the sauce thickens and everything is coated in creamy goodness. Sprinkle with chopped parsley.
Served with pasta, rice or mashed potato
