Ingredients
For the Beef:
500g beef (blade or rump steak), thinly sliced against the grain
1 tbsp soy sauce
1 tbsp dark soy sauce
1 egg
1 tbsp cornflour
1 tbsp black pepper

For the Sauce:
2 tsp sesame oil
1 tbsp fresh ginger, minced
3 cloves garlic, minced
1/4 cup soy sauce
1/4 cup dark soy sauce
1/4 cup water or chicken stock
1/4 cup brown sugar
1 tsp cornflour mixed with 2 tbsp water (optional for extra thickness)
To Serve:
2 spring onions, sliced
Steamed rice
Optional: sesame seeds for garnish
Step-by-Step Instructions
In a bowl, combine the sliced beef with soy sauce, dark soy sauce, egg, pepper, and cornflour. Mix well and let marinate for at least 30 minutes.
Heat oil in a deep pan or wok. Once hot, deep fry the beef in batches until crispy outside, tender inside. Drain on paper towels.
In a clean pan or wok, heat sesame oil. Add ginger and garlic, sauté for 30 seconds until fragrant. Stir in soy sauce, water, and brown sugar. Bring to a gentle boil and simmer for 2–3 minutes. If needed, add cornflour slurry and stir until sauce thickens slightly.
Add the crispy beef and spring onions into the sauce and toss quickly to coat.
Top with a sprinkle of sesame seeds if using. and serve hot over steamed rice.
