Mango-Lime Glazed Christmas Chicken

Ingredients


For the Chicken:

  • 1.2–1.5kg chicken thighs or drumsticks

  • 1 tbsp olive oil

  • Salt & pepper

  • 1 tsp garlic powder

  • 1 tsp paprika


For the Mango-Lime Glaze

  • 1 large ripe mango, peeled and diced

  • Juice and zest of 1 lime

  • 2 tbsp honey

  • 1 tbsp soy sauce

  • 1 tsp grated ginger

  • 1 tsp minced garlic

  • Optional: 1–2 tbsp water (to thin if needed)


To Serve:

  • Lime wedges

  • Fresh coriander or parsley

  • Extra mango cubes (for that Christmas-summer pop!)



Step-by-Step Instructions


  1. Pat chicken dry and place in a large bowl. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika. Toss to coat evenly.


  1. Add mango, lime juice + zest, honey, soy sauce, ginger, and garlic to a blender. Blend until smooth. Add water if needed to loosen. Adjust to taste — more lime = more tang, more honey = sweeter.


  2. Preheat BBQ or grill to medium-high heat. Lightly oil the grates to prevent sticking.


  1. Place the chicken on the grill (skin-side down if using thighs). Grill for 10 minutes, turning occasionally, until starting to brown.


  2. Begin brushing generously with the mango-lime glaze. Continue grilling for another 10–12 minutes, basting every couple of minutes. The glaze will caramelise beautifully!


  3. Brush with any remaining glaze right before serving. Top with fresh herbs and extra mango cubes. Add lime wedges for squeezing — so summery and bright!
