500g beef chuck or stewing beef, cut into bite-sized pieces
2 tbsp vegetable oil
1 large onion, finely chopped
Korma curry paste
1 tablespoon coriander seeds
1/2 teaspoon ground turmeric (turmeric powder)
1 tablespoon garam masala
1 tablespoon oil
2 garlic cloves, chopped
1 teaspoon fresh ginger, chopped
1 tablespoon tomato paste (tomato purée)
1 tablespoons desiccated coconut
1 tablespoons cashew nuts, finely ground
1 tablespoons chopped coriander leaves
1 cup plain yogurt (or coconut milk for a dairy-free option)
1 cup beef stock
1/4 cup cashews, for garnish
Fresh coriander, for garnish
Salt and pepper, to taste
Steamed rice or naan, for serving
Step-by-Step Instructions
Season the beef pieces with a pinch of salt and pepper. Heat 1 tablespoon of vegetable oil in a large pot or skillet over medium-high heat. Sear the beef in batches until browned on all sides, then set aside.
In the same pot, add another tablespoon of oil and lower the heat to medium. Add the chopped onion and cook until soft and golden, about 5 minutes.
Add the korma curry paste to the pot. Stir everything together, letting the spices bloom for 1-2 minutes.
Return the beef to the pot, then stir in the yogurt and beef stock. Bring the mixture to a gentle simmer. Cover and cook on low heat for 1.5 to 2 hours, or until the beef is tender and the sauce is thickened. Stir occasionally to prevent sticking.
Garnish with fresh coriander and cashew and serve hot over steamed rice or with warm naan. Watch as your family digs into this creamy, spiced perfection!
